Recipe #11

From my dear, sweet Happy Zombie:) -

Here's my standard once a week chicken dish.

Whole chicken, cut down back and "opened". Mix one 1/2 jar of apricot jam with equal amount of shoyu (soy sauce) and pour over chicken. Bake uncovered at 425 for about 15 minutes (watch so that it doesn't burn), and then loosely covered at 350 until done. And I have no idea how long "done" is, sorry. Serve with rice, green beans, carrots, etc.

YUM! I bet the jam and soy sauce really play off each other. I will definitely be trying this one:) Thanks Monica!!!

I hope you like it! My DS likes to have some of the sauce from the pan in a little dipping dish and then dips his chicken in it ala McNugget - but soooo much better! And the house smells so good when it's baking - smells like "family feast"!

And if you use Bonne Maman apricot jam... even better! Plus you get a cute jar after just making this twice (I use half a jar per chicken).
