Beef...it's What's for Dinner....


actually ground beef and zucchini and a whole lot of other yumminess...look at all those beautiful colors! And the zucchini is from my very own little garden of three whopping zucchini plants!!! How cool is that!!!!

GROUND BEEF AND ZUCCHINI SKILLET

1 pound ground beef
1 tablespoon dried minced onion
1 teaspoon minced garlic
1 (15.25 ounce) can whole kernel corn,
drained
1 (14.5 ounce) can diced tomatoes,
undrained
1 medium zucchini, halved and sliced
1 (4.5 ounce) jar sliced mushrooms, drained
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup grated Parmesan cheese


In a skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink; drain. Stir in the corn, tomatoes, zucchini, mushrooms, basil, oregano, salt and pepper. Cover and simmer for 10-15 minutes or until heated through and zucchini is tender. Sprinkle with Parmesan cheese.
I didn't have any parmesan cheese so we used mozzarella instead. Also, if I make this recipe again I will add a can of green chile. It was good, but needed just a little more zip if you know what I mean:)
